Cabo Trip Recap

Hello, friends!

This post is very much overdue, I apologize! I had endometriosis surgery (blog post linked here) in June and had time off of work, which means I was able to catch up on a few outstanding blog posts. My mom and I went to Cabo (one of our favorite places) for her birthday at the end of April and had so much fun together! It was a girls trip and I’m so glad we got to spend quality time together. We used Costco Travel (Charlie and I used this for our previous Cabo trip) and cannot recommend it enough! We had such a wonderful overall experience and the Costco package makes planning a trip so much easier/stress free.

Day one:

We left Phoenix around 10am and landed in Cabo around 1pm local time (1 hour time change). We had a private driver from TransCabo pick us up (with a cold Corona waiting) who drove us to the Marquis Los Cabos, which was about a 30 minute drive. The property was beautiful and nestled right on the ocean with all oceanfront rooms. We were also greeted with welcome cocktails, which were delicious. We quickly set our bags down in the room and went to eat a light lunch before dinner. The Marquis is an all-inclusive property, which is a definitely a must when going to Mexico. We split the most delicious ceviche and taquitos for lunch, along with yummy margaritas at one of the on property restaurants.

The day we got there was my mom’s birthday so we made sure to celebrate and had a really fun dinner for our first night! We went to Sakke, which is on property, and had the freshest sushi and ceviche, along with dessert to celebrate. The food was delicious and such a fun experience since they also have hibachi tables.

Day two:

We woke up early and went to the gym to get in some exercise before the day, I did a 15 min HIIT circuit and 15 incline walk. We then went to breakfast at Vista Ballenas on property and had the most delicious and fresh food. The fruit, coffee, juice, and omelettes taste a million times better in Mexico. The ingredients are so much fresher in my opinion. After breakfast, we went to the spa and got facials together. We spent time just relaxing and enjoying the spa for a bit together, which was so nice.

After the spa, we went out to the pool for drinks and lunch. The baja ceviche was INCREDIBLE and I ate it every single day. I also rotated between mango and cucumber margaritas with a tajin rim, both were amazing. The pool areas were so nice and we staked out our spot for the rest of the week. Pro tip: go early in the morning, tip the pool attendant, and have them reserve your spot for you because the pool areas get packed during the day. We also went out to the ocean and unfortunately couldn’t swim in it, but it was still nice to put our feet in.

We then went to dinner at Pergola, on property, and had an incredible Italian dinner overlooking the ocean. The food and wine were delicious and you could not beat the incredible views we had for dinner. We had to celebrate my mom’s birthday again (it was a long weekend celebration) and they brought us a fun dessert to celebrate.

Day three:

We woke up and went for a beautiful walk along the ocean to this little cove. It was so peaceful and calming to just listen to the waves crashing along the rocks and beach while breathing in the fresh coastal air. Being by the water is my happy place and makes me feel so relaxed. After our walk, we had a quick breakfast at Vista Ballenas again then went out to the pool to read and relax for the day. Big shocker, I also got baja ceviche again, and we split a pollo wrap (a must get by the pool, it was delicious). After the pool, we went out to the tennis court and played tennis around 4pm, which I don’t recommend doing in the afternoon (it was SO hot), but we did have so much fun playing. It was nice being able to rent racquets from the lobby and play a few games to sweat before dinner.

For dinner, we went to a fiesta on the beach where they had amazing street tacos, a mariachi band, and incredible after dinner show. It was wonderful entertainment and so glad we decided to attend for one of our nights on property.

Day four:

The next morning, we woke up early and played tennis, which was a million times than playing in the afternoon sun! We had so much fun playing and laughed the entire time. We then went for another beach walk before making our way to breakfast at Vista Ballenas. After another delicious breakfast, we made our way to the pool and also spent more time at the beach. We brought margaritas down to the beach and stood in the waves for a bit – the water was SO nice, it was so hard not to jump in. I had another baja ceviche for lunch (surprise, surprise) and we also split nachos.

We then went to the on site clinic for our COVID-19 tests, which were previously required prior to entry to the United States. We booked our tests when we first checked in at the resort and it was an extremely easy process. After our tests, we went back to the room to freshen up and went to happy hour for our last night in Cabo! I’m a huge espresso martini fan so I got one while we enjoyed the view of the ocean. After happy hour, we made our way to dinner and had the most delicious meal! I got the steak and it was so flavorful. The view from our table was also incredible with a beautiful sunset for our last night.

Day five:

We skipped our morning workout to make the most of our last day and went straight to breakfast. Had my favorite omelette with fresh pico, fruit, green juice, and coffee. I also brought coffee to enjoy by the pool since we got out there pretty early. I also of course had one last baja ceviche before we left, I was so sad knowing it was my last one. We enjoyed the pool and beach again for one last time then were able to utilize the spa to shower and get ready for our evening flight back to Phoenix.
